      LOL – may have to do that soon Grant (I’m the flour tortilla gal and your the corn guy I know 🙂 but I’ve watched it done and the flour ones would even be easier! (no shaping). Carrie (neighbor) says her hubby makes his own.

      now I want to try the orange juice even more!!  and yes, I saw the broiler option too!  could be more uniform.    if I make another batch, I’ll have to start selling taco’s (i.e. it makes a pretty good amount) I just made another neighbor a taco and she loved it (as you’ll see on FB)

        Hey Grant!   yes, these do need refrigeration – it says overnight but the first 2 times I made them I only did it for 30-40 minutes and they were fine – as long as you can make them into “thumbs”.

          I also made a yummy thrown together (and fairly healthy) chicken, veggie, creamy cheesy bake with zucchini noodles and riced cauliflower.  was actually quite good (just had leftovers :-). I think that was the overview of my cooking week!

                they told Grant that the produce in Mexico had to be cooked to make salsa (because of the quality) and that you could only make “fresh” salsa in the US.   I’ll learn more Thursday as we are making salsa, guac, beef tostadas and chicken enchiladas (on a mountain) – can’t wait!  and Thursday will be a gorgeous day (finally!).  rain is to clear up for good before noon today YAY!

                  they were yummy – our cooking class got delayed until Thursday (and I made shrimp pasta for us last night) but we are going “downtown” this afternoon and I expect to find some really nice “bites”!  🙂

                    This saga continued from Saturday until Tuesday, but I DID eventually get the ingredients (and MANY miles on my car!) and made the soup Tuesday – pretty good, but has some room for improvement
