      These onions are magic!  I like to put them in almost everything.  Thanks for the reminder.  Looking forward to seeing the FOS.  I think that is on the menu this week here in Chicago too.

            That was a great place in PV.  It was so simply served on a bed of rice and a sauce for the gods.  He told us it was his mother’s recipe.  ❤️

                I think you might love living on the ocean… seems like seafood is in most of what you love to eat.  I’m thinking about spending a couple of months in Mexico next winter….

                      Looks great.  One trick I do when I don’t want all that bread is to carve out some of it so that it has less of a presents.  I’ve seen many people do this on bagels, tear out the soft center for more room for lox, capers, onions & tomatos.

                          These look perfect. My Mexican friends swear by using oranges and dark Mexican sugar. It Will make them brown and be crispy. Another way to make them crispy is under the broiler.

                            Nice!  I love croquettes.  My favorite ones have been when I am in Amsterdam.  There is a couple of carts outside of the floating (flower) market.  I’ve made these for parties and they are loved and disappear fast.   The last time I made them, I enlisted a couple of my guests to fry them.  Do these need refrigeration after you form the croquettes?  How long?
