When you have poblano’s you need to use (which you bought with no plan – just because you like them), you dig out one of Chef Jenn DiSanto’s old cooking class recipes, thaw some chicken and have your neighbor pick up cherry tomatoes on her grocery run. In this case I only had chicken breasts, but it was so good, I bought chicken thighs this morning to make it again “properly” – Monday night’s cooking adventure! I think I’ll even make the creamy polenta when I do it again! the goat cheese and cilantro garnish is awesome! the pics don’t do this one justice
