experimental eggplant?

      sooo, while walking through the grocery, I grabbed a couple of eggplants thinking that eggplant parmesan sounded good – something I’ve made maybe once or twice 10-15 years ago.   Did my normal research –  reading several recipes (including an old family recipe given to me by an Italian friend years ago) and moved into the experimental kitchen Thursday evening.   it turned out pretty well, but after tasting for lunch Friday, I made several notes and think it can be greatly improved on the next try (like the tom Kha Gai soup and crab louie dressing, I’ll post only after multiple attempts when I feel it’s really good). I also shared (of course), so will get comments back from them as well to tweak a recipe for next time.  Meanwhile, I not only took a photo of the final – I actually took some in progress ones this time!   enjoy!
