So, after much waiting with baited breath – one of my BD gifts from “my kids” (as I refer to my daughter Jenni and her husband Chris who live in NOLA) a day late the styrofoam box arrived.
after jumping on a zoom with them (so they could see my face) – I found that packed with ice bags was 5 lbs of fresh crawfish from NOLA. wow! ur talking my language! I froze 3 lbs. of it and last night made my first Crawfish Étouffée.
I did my usual research, printed 2 recipes and made something up (which I HOPE I can remember accurately today!) I seems that 1 lb didn’t go as far as I thought (they are small once peeled – which is a bit of tedious work btw!) so I used the whole 2 lbs. It turned out really well (Super Yum!) and today Joe pronounced it “fabulous” – a word Carrie had not heard him use about food before!
