has spent many, many years traveling the globe in search of what she calls:
“The Perfect Bite”
The challenge is to achieve in one fork full an entire synopsis of the dish. The premature and inexperienced will dig in deep and offer a fork full before they themselves have experienced the pleasures of the dish – When faced with a premature offering Vicki will politely decline and explain the principals of “The Perfect Bite”.
I first developed the concept of the “perfect bite” – which is laughingly shared with most who have dined with me – because of my unwavering desire not to leave any culinary experience unsampled. Whenever I’m at the table with friends, colleagues, etc. I try not to order something that has already been ordered. and then if I truly like the dish, I offer perfect bites to others – but more important, I expect to have one from any dish at the table which looks good to me (this often catches people a bit off guard at business meetings). A perfect bite can only be constructed when you’ve eaten enough from the dish to know what flavors mix best together and then can precisely construct a small sample that provides just enough of everything to create the perfect tasting experience. (ie. It’s NEVER the first bite!) – folks who like to share often position themselves near me at a table for sharing. I also like just sharing a plate 50/50 as well (I’ve managed to totally embarrass a former boss at a VERY fine restaurant in gent Belgium by swapping plates with my friend Catherine right at the table!)
So here is the challenge – discover the perfect bites in your world, share them & tell everyone about it!
I have added a guest section to the blog so you can share your own recipes and document the place, the dish and a description of “The Perfect Bite”.
I will also add some of my favorite restaurants & recipes.
Thanks
Vicki
