      So, my apologies for not blogging last weekend, it has been hectic with work and school (and this past week was exam week – yes, I got 100 on my written cooking exam and 98 on my cooking exam – which entailed starting with the whole sole again and making that recipe, as well as poached chicken breasts and vegetables).  Also finally got to see my mother (after a year of not doing so due to COVID) and take her to 4 dr. appointments. oh, and that minor snow storm!  No pics from the exam tho, so I’m catching up with food we cooked the week before (and you already saw the eclairs with yesterday’s post).

      Fry Day – we learned how to deep fry things in a professional fryer!  (not diet week, yet again!) We battered and fried fish, we fried home made potato chips and beer battered onion rings, we pan fried chicken and made pan sauce (“gravy” in my southern family’s world :-), we made a ton of cole slaw (which I ate for a week!) and home made tartar sauce – with CAPERS! (YUM!)

      Wow – thankful for dogs to walk and that I didn’t gain any weight in the last 2 weeks!
