      3 kinds of meat!!

      So I decided to do a typical burger and slaw for Memorial Day – a treat for me, as I don’t eat a lot of red meat (as you’ve likely noticed) and also because watching some of those TV shows, I had seen a highlighted “best burger that looked like something worth trying to duplicate.  This is something new I’ve been doing lately and I must say it’s easier to duplicate a restaurant dish – as you’ve TASTED it! (and I’m famous for asking what’s in something – as per the tiny scribbled order pad that was all I had for years for the famous meatballs in tomatillo sauce).

      so the star of this show?   bacon jam – made with pork belly and caramelized onions! Yum!

      so I picked up pork belly (first time I’d bought it) and also tried a “brisket burger” for the patty (whole foods meat man explaining it had multiple cuts of premium meat).

      made the bacon jam, whipped up some Cole slaw. (always with bacon on top since I learned that from Wiley) and built the burger of a restaurant (forgot to note which one – DUH!) on a show (unique eats, maybe?).   Toasted bun, aoili (both sides), arugula, patty, fontina cheese, bacon jam and picked onions (right up MY alley!

      all I can say is that it’s probably the best burger I’ve ever made myself. Most of the full plates I shoot – I end up eating only half (I typically eat multiple small meals a day)  – I at this WHOLE thing!  🙂

        This looks amazing !! I have got to try this at home – without a safety net !! Looks FAB U LOUS  x x x Keep these recipes coming !

          it was the best burger ever!   I can give you the “rough draft” of a recipe – which is basically the post it notes I took while watching the show (same thing happened when I tool my neighbors chicken mole – the dad went immediately to check here to see if I posted a recipe – I sent him a pic of the post it note!) tho I CAN start writing some of this stuff down when it turns out well.   that burger IS a keeper!  XX
