I didn’t do much cooking yesterday – but splurged on a BLT for lunch and just did a quick “fake” carbonara (bacon i/o pancetta) between zoom happy hour calls last night to celebrate yet another lap around the sun. obviously I had bacon to be used! LOL. as I’d eaten carnitas for a week already, no Mexican cooking for this Cinco de Mayo birthday girl!
