      as we continue the “e” alliterations 🙂

      ok, after working all day Sunday, I had some ingredients to use up, so I made the mismatched recipes of Croquetas de Jamón, Roasted Cauliflower & Zucchini, then with goat cheese sauce with onion & garlic, and a pot of Jambalaya (as requested by a friend 🙂

      The Croquetas weren’t actually as fab as the first two times, tried to cook them a little less to be more “saucy” inside (not an improvement) and the seasoning was a little light – lessons learned (but the recipe itself is still sound

      The “bake” – can you say SUPER YUM?!  I wrote down exactly what I did yesterday (guessing proportions and cooking time, as I didn’t know it would be a keeper – will I EVER learn?), sent it off to a friend, will get her feedback and make a 2nd round and post a recipe

        Nice!  I love croquettes.  My favorite ones have been when I am in Amsterdam.  There is a couple of carts outside of the floating (flower) market.  I’ve made these for parties and they are loved and disappear fast.   The last time I made them, I enlisted a couple of my guests to fry them.  Do these need refrigeration after you form the croquettes?  How long?

          Hey Grant!   yes, these do need refrigeration – it says overnight but the first 2 times I made them I only did it for 30-40 minutes and they were fine – as long as you can make them into “thumbs”.
