Pad Thai with Cher – again

2020 REVIST

in 2013, Cher and I spent an awesome Sunday afternoon doing a “Pad Thai test kitchen”, as we both wanted to find a great recipe.  We both brought recipes and ingredients, we made 3 kinds of noodles, 5 sauces and experimented for hours with the combo’s.  we came up with 5 that we liked and ranked them.  unfortunately, due to our first time out (and some wine consumed along the way), we failed to accurately capture exactly what we did to create our favorite (tho it came close).  So last week, we got together again and tried to recreate our fave (from the rough recipe), try some new noodles and sauces, and tweak our recipe.   SURPRISE!   we liked our chosen sauce again, and feel we duplicated it pretty well!   I’m going to try it one more time on Friday this week – WITH another pot of the Tom Kha Gai soup – and I’ll then post the recipe for you!
