      This has been a standard for me since childhood.  Taught to me by a beautiful woman from Jalisco.  I am vacationing here in Jalisco (with Vicki).

      Ingredients:

      Eggs (1-2 per person)

      Splash of Cream or Sour Cream (yes cream)

      Salt and Pepper (to taste)

      Ground Pork Chorizo

      1-3 Potatoes – Any kind

      1/2 small Onion

      House made or really good tortillas (flour or corn)

      Queso Fresco (crumbled)

      Cilantro chopped (optional)

      Salsa – house made!

      Make: Heat skillet to medium (this is a one skillet recipe)

      1. Scramble eggs and add cream, salt and pepper

      2. Cook lightly just until nearly solid but not overcooked.

      3. Remove eggs from pan and place in a covered dish.

      4. Rough grate the potatoes and chopped onion and fry on medium heat in olive oil until soft (about 10 minutes)

      5. Remove potato and onion and place in the same covered dish as eggs.

      6. Add chorizo sausage in the pan and cook for 2-3 minutes until fully cooked.  Remove and drain on a paper towel.  Draining removes most of the fat and makes the dish less about the chorizo.

      7.  Lightly mix the eggs, potato/onions and sausage.

      8. Rinse or wipe out the pan.

      9. Toast tortillas in the pan (both sides) until light brown spots show up.

      10. Crumble the cheese in a bowl (about 1 Tbs per taco).

      11.  Assemble by placing 2 Tbs of the egg mixture on a tortilla, topping with cheese and then salsa.

      12. Fold and fill your tummy.
