The first year in my house in Pittsburgh i had a little garden (i won’t even entertain you with a pic) but for the first time, i grew arugula and simply ADORED running with scissors out to the little patch about every other day and making a salad for lunch with fresh cut arugula (the deer had their way with the 2016 version, but that’s another story đŸ˜‰  I had also come up with a favorite appetizer some time before that – it was portobellos stuffed with a farro mix with goat cheese – which always yielded extra farro mix and i’d usually throw some chopped shrooms in it for a nice healthy ancient grain side.  i plopped a mound on the arugula one day, dressed with simple vinaigrette (from my extensive collection of flavored vinegar and oils, but that’s yet another story) and a new salad was born that i proceeded to love and eat all summer!!
